I personally have not had that much experience with either rifle, but I have shot/handled the VFC SR-15 for a little while. As with all VFC guns, fit and finish are some of the best around. Internals are solid, as with newer VFC AR style AEGs. A solid performer for the money, especially considering how accurate the VFC representation of the SR-15 is.

As for the G&P, I know that the standard AR-15 types have gotten better with each generation, although that SR-25 is of a slightly older generation (than compared to, say, the newer XM110 that they have out) . Furthermore, I know it doesn't quite correspond to the current AR-15 series, as after all, the SR-25's are AR-10 derivatives and have Elongated Ver. 2 gearboxes and as such are slightly different. On a general note, G&P's usually have great externals, and pretty good internals. I couldn't tell you for sure on this one though.

I just got a G&P XM110, and assuming G&P updates their SR25 line along with all of their other guns, it will have a standard V2 gearbox (the new-ish 8mm one) and a standard M4 hopup chamber with a metal spacer between the front of the GB shell and the hopup chamber. The only difference between the XM110's internals and say a G&P M16's is the nozzle, and that spacer if you count that. The suppressor isn't foam filled... can't really think of anything else.
